The collaboration

The partnership brings together Moriarty and the award‑winning New York venue for a tightly focused dining experience. Guests will be served a five‑course menu matched with five cocktails created by The Dead Rabbit team.

Mark Moriarty became a chef partner with The Dead Rabbit in 2024. He said staging the collaboration at his new studio felt like an ideal way to open the space and that he admires what the team in New York have achieved, including the quality of their drinks.

Partners and reputation

The Dead Rabbit is celebrated for its Irish Coffee, live music and a reputation for pouring a large volume of Guinness — more than 250,000 pints a year, the organisers note. Its founder, Jack McGarry, has twice won the World’s Best Bar title at the Tales of the Cocktail Spirited Awards.

Glendalough Distillery joins as pouring partner. Head distiller Ciarán “Rowdy” Rooney described the collaboration as grounded in a shared curiosity about contemporary Irish food and drink, and said the distillery was proud to feature on a menu celebrating Irish creativity and craftsmanship.

When, where and how to book

The dinners take place at 6.30pm on Tuesday 22, Wednesday 23 and Thursday 24 September. Each sitting is deliberately small — just 20 guests per night — to keep the evening intimate.

Tickets are priced at €250 per person, covering five courses and five cocktails. Sales open on Monday 31 August at 11am through markmoriarty.ie/studio.
