Irish firm producing luxury ice made over three days draws celebrity fan

Hospitality professional Richie French has introduced the LXRY ICE Collection, a premium range of ice blocks intended to change how drinks are prepared and presented. The brand says the product is not merely decorative — it can influence flavour, balance and the overall drinking experience.

How the ice is produced

French describes a multi-stage purification routine designed to remove impurities and achieve exceptionally clear ice. The process uses micron silt filtering, UV treatment and reverse osmosis, followed by continuous water movement to limit cloudiness.

He also highlighted the role of directional freezing, a controlled technique that helps exclude air and minerals as the water solidifies. According to French, each block takes about 72 hours to freeze fully and the finished pieces are notably pure. “Our scientific process gets the water so crystal clear,” he told EVOKE, adding that “you would not be able to do this at home.”

The finished blocks are large — roughly 150kg — and require a crane for lifting before being sawn into smaller sizes for use in bars and events.

What it means for drinks

LXRY positions its ice as a functional ingredient rather than a garnish. The company argues that clearer, denser ice melts more slowly and preserves a drink’s intended balance and flavour profile, while also improving visual presentation.

Those claims align with a growing trend in hospitality where attention to small production details is used to lift cocktails and non-alcoholic beverages alike.

Early response and where to buy

The collection has already attracted endorsement from Irish food personality Donal Skehan, who posted about the product online. “Loving the ice balls from new Irish brand LXRY Ice – fancy ice cubes! Serious notions I know but how cool. Makes cocktail hour a little more special,” he wrote.

LXRY Ice is not yet stocked in supermarkets. Creators say they hope to make the product available to retail buyers in the coming weeks.
