Oyster Month returns in September, and Dublin’s The Shelbourne is marking the season with a dedicated oyster menu and matching drinks. The hotel’s No. 27 Bar & Lounge will offer a selection of Irish oysters and curated pairings throughout the month, positioned as a late‑summer dining highlight.
A coast-to-coast oyster lineup
The Shelbourne’s menu showcases shells from three Irish regions: Carlingford in Louth, the Flaggy Shore farms in Clare and Kelly’s Giga oysters from Galway Bay. It is part of the hotel’s larger oyster programme, which serves more than 20,000 oysters a year.

Guests can order half a dozen oysters on the half shell for €24. For those seeking bolder flavours, the menu includes ponzu oysters dressed with chilli and spring onion, plus a spiced Oysters Bloody Mary priced at €27.
Cooked options are also available. Both Oysters Rockefeller and a Tempura Oyster Truffle are on the list at €28 each. Another signature is the Shelbourne Lawyer, served with Liscannor crab and a Green Spot whiskey glaze.
Pairings crafted for each dish
For 2026 The Shelbourne has introduced a drinks programme designed to complement each oyster preparation. Pairings range from classic champagne to cocktail-style matches meant to highlight texture and seasoning.

Highlights include the house oyster matched with Laurent‑Perrier Brut, while the ponzu oyster is paired with The Orchard No. 4, a blend featuring Boatyard Vodka and hibiscus. The Oyster Bloody Mary is served alongside a Spiced Bloody Mary cocktail.
The Tempura Oyster Truffle is accompanied by L’Oro Royal No. 2, and the Rockefeller receives a match in Citrus Botanica No. 3. The Shelbourne Lawyer is paired with a Green Spot Old Fashioned.
